shortbread cookie bites

Let's just start this whole thing by saying that if you have an addictive personality or little to no will power do not make these. I could not stop myself or my husband or my kids from shoving these little tasty bites into their mouths every chance they got. I had to get rid of them. Read: give to my parents.
These would look way prettier if we could have found nonpareils but we couldn't. So we just made do with red and green sprinkles which was a bummer but they taste amazing just the same.

Ingredients:
1 cup of salted butter, cold and diced into 1 tbsp pieces
2/3 cup granulated sugar
1/2 tsp almond extract (I always let it flow over a bit because I have a thing for almond extract)
2 1/4 cup flour
Sprinkles. We just added till we thought they had enough, maybe around 2 tbsp

In your mixer mix together butter and sugar. Then add almond extract (yum!). Set the mixer to low and then slowly add the flour until fully combined. After that you can start in with your sprinkles to your liking. 
I used a 13 x 9 baking dish that I had sprayed with pam and then lined with parchment paper, the pam helps it stick nicely to the dish. I had another sheet of parchment waiting for the top then as well. I placed the dough on top of the first piece of paper and using my hands I flattened it out as best I could. I then added the top piece of parchment and used a small bowl to flatten it and smooth it out more. Then you refrigerate for about a half hour.

This is when we watched Frosty the Snowman.

Preheat the oven to 350°. Lift the dough out of the baking dish using the parchment paper. Remove the top layer. I put a cutting board on top of the dough and then flipped it to remove the bottom piece of parchment paper. Then using a sharp knife I cut the dough into strips and then into 1/2 inch cubes. 
Place these spaced out evenly on an unbuttered baking sheet. If you want to add more sprinkles at this point you can, just gently press the sprinkles into the dough. I baked these for 8 minutes. You could do a little more but I like softer cookies. If you need to wait for another baking sheet just throw the cubes back into the fridge.
Then start eating.
