spinach cupcakes for the girl who NEVER eats her greens.

And her mother.

We do not eat vegetables in this house. Well Matt does, but the rest of us do not. I'll do a salad of course and anything in a stir fry (but broccoli - yuck!) but that's where it starts and ends. The kids think that corn is the end all of all things veggie related. So when I say she never eats her greens I mean she has not eaten a green thing since she looked like this:

Until now. My sister made these cupcakes for her daughter who of course like a good little girl eats practically everything. Letty was helping me this past week on our Lena Day and kept taking a chunk of cupcake for Lena (one for Baby Lena) and another for herself (one for Baby Letty). I was shocked. Floored. Awestruck. Etc. I took a very tentative bite. Hey, if she could do it so could I, yes? No spinach taste. Just slightly sweet. Like cake! My sister had extra ingredients and so thank you to her here we are! Very serious about making ourselves some spinach cupcakes. Or green cake as Letty calls it.

Recipe makes 15 cupcakes. 

3/4 cup of pureed spinach
1 teaspoon vanilla
2 eggs
1/4 cup of oil
1/2 cup of applesauce
2 cups of flour
3/4 cup of sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon of salt

Combine all dry ingredients in a large bowl. 

And then put all wet ingredients in a blender. Now for the whole puréed thing? Nah. I just stuffed (and I mean that quite literally, like put my back in to it stuffed) as much raw spinach into one cup as humanly possible. So I suppose that line should read "one cup tightly stuffed raw spinach" for the lazy folk such as myself. I just blended it all till fully mixed. 

Then add to dry ingredients.

Put in cupcake liners (about 2/3 filled). 

The girl licked the entire bowl. I kid you not. Bake for 20 minutes at 350 degrees. 

I tried to get David to indulge. Hulk Cupcakes? No. TMNT Cupcakes? Nopers. Ah well. Live to try another day.
