italian christmas cookies

Hey newsflash: I'm Italian. Shocker I know. I was perusing Facebook the other day and came across an intriguing recipe. A recipe that had my name all over it.

Italian Christmas Cookies
4 eggs
1 cup sugar
1/2 cup butter
2 tsp vanilla
3 1/2 cup flour
4 tsp baking powder

Sift the dry ingredients together.

Cream the butter and sugar. Beat in eggs. Add the vanilla and then all the dry stuff.

Normally when a recipe calls for using flour on your hands I scoff. Ha. But in this case this stuff is very sticky. Might I recommend covering your hands in flour. This particular recipe calls for rolling it into logs and then sort of piling them up. I suppose you could just put them in plain old balls. But I did the little twisted pile of dough logs.

Bake at 375 degrees for 10 minutes. Allow your sick daughter to lick the spoon.

The icing!

2 cups sifted confectioner's sugar
2 tsp vanilla
6 tsp water

Stir until creamy.

After the cookies have cooled just dip away. If you are like me you'll do them all at once hoping to add sprinkles later. Well that didn't work out to well as the icing turned hard by that point. Nothing a little dip and press into sprinkles couldn't handle. And this is messy work. Prepare yourself for that.

God bless Italy. And Christmas.
